A well established Afghan Cuisine casual dining restaurant. An gourmet street and soul food restaurant, with authentic homemade recipes.
This is a very busy venue that has multiple seatings per evening
Duties:
Must be able to work under extremely high stress environment
Must have great knowledge of Dubai Muncipality rules and regulations – PIC certificate holder.
Must be able to manage both BOH and FOH
Must have a strong presence and personality
Must be able to bring in more business to the company (Catering etc )
Must be extremely organized
Should be willing to take restaurant tasks over days off
The Manager will be expected to handle and manage two or potentially three branches of the restaurant.
The manager should be able to enforce the DM rules and regulations inside the kitchen on staff and outside with FOH staff.
The manager should have very strong multitasking skills
The manager is expected to give weekly status reports which will cover the overall update of sales, staff, customer complaints, day to day operations etc. A template needs to be drafted by the manager and the update needs to be shared by the end of every week.
The manager should respect and meet deadlines
The manager should be able to recruit, train and supervise both FOH and BOH staff.
Should be able to oversee stock supplies and do inventory end of the month
The manager should be a fast learner and must study the Afghan cuisine and restaurant menu.
Managing budgets and meeting daily/monthly targets
Handling customer enquiries and complaints.
The manager should be able to handle administrative and paperwork. Make schedules for BOH and FOH staff.
Ensuring compliance with licensing, hygiene and health and safety legislation/guidelines.
Liaising with customers, employees, suppliers, licensing authorities and sales representatives.
Making improvements to the overall running of the business and developing the restaurant(s).
Taking reservations.
Greeting and advising customers.
Problem solving and coming up with solutions instead of adding to problems.
The manager should have extremely high work ethics.
The manager should be able and WILLING to promote and market the business.
Ordering food supplies and assisting Senior CDP in dealing with suppliers.
Assessing and improving profitability.
Manage kitchen staff and coordinate food orders
Store food products in compliance with safety practices (e.g. in refrigerators)
Keep weekly and monthly cost reports, wastage reports and
Maintain sanitation and safety standards in the over all restaurant.
Please note that the salary for this role will be 12 - 13k for the role

Proven work experience as a Kitchen Manager, Restaurant Manager or Head Chef
Hands-on experience with planning menus and ordering ingredients
Knowledge of a wide range of recipes
Familiarity with kitchen sanitation and safety regulations
Excellent organizational skills
Conflict management abilities
Ability to manage a team in a fast-paced work environment
Flexibility to work during evenings and weekends
Certification from a culinary school or degree in Restaurant Management is a plus
Previous experience in Afgan / Middle Eastern / Indian / Pakistani restaurant environment is essential
