Position – Head Chef/ Chef de Cuisine
Location – Dubai
JD:
Controlling and directing the food preparation process and any other relative activities
Constructing menus with new or existing culinary creations ensuring the variety and quality of the serving
Approving dishes before they reach the customer
Assist in the selection and development of recipe
Plan and cost menus for special events, chef choice menus
Plan orders of equipment or ingredients according to identified shortages
Arrange for repairs when necessary
Remedy any problems or defects· Be fully in charge of hiring, managing and training kitchen staff
Oversee the work of subordinate
Estimate staff’s workload and compensations
Maintain records of payroll and attendance
Comply with nutrition and sanitation regulations and safety standards
Foster a climate of cooperation and respect between co-oworkers
To ensure that Food Safety and Kitchen Hygiene standards are followed at all times within the guidelines set by the Municipality by making daily inspections of the kitchen and reporting any faults or concerns to the F&B;Operations Manager accordingly
To attend Food and Beverage meetings or any other meetings that may require.
المهارات
The ideal candidate must have served in a 4/5 star Hotel/Restaurant and should have experience in International Cuisine for a minimum of 5 years
