You will have the complete responsibility and accountability for managing sales, profitability and customer experience in line with the overall business objectives and assisting in the definition of a brand portfolio strategy for the Brand category.
Strategic Responsibilities:
Support in developing and implementing a commercial and brand portfolio strategy in line with the Overall F&B;Strategy including limited to products, people, marketing and expansions.
Establish both monthly and annual sales and net profit objectives of the Brands in line with overall F&B;targets.
Develop the budget in coordination with the Committee and respective Functional Heads; consolidate and refine the overall budget for the Brand
Monitor and control the expenses in line with the budget ensuring the cost to revenue ratios are managed at all times.
Functional Responsibilities:
Operations
Review and establish Brand specific structure along with work flows and job responsibilities in the back-of-office & front-of-house (i.e. purchasing, inventory, kitchen, sales & operations) to meet process & cost efficiencies, consistent quality and superior customer service.
Report the business performance of the brand portfolios of the F&B;Division.
Oversee that the highest levels of quality in the look and feel of the restaurants is applied and is in line with the Brand requirements and guidelines, and the Standard of Operations for both Front of House and Back of House functions are maintained at all times.
Oversee that the highest levels of customer service is implemented in the business with continued compliance to internal and Principals requirements.
Oversee the appropriate level of security and stock control to minimize shrinkage, food wastage and theft
Direct the highest level of professionalism across each one of restaurants by overseeing recruitment, training, management and career development of the staff.
Conduct regular restaurant visits for Internal Audits for both Front of House and Heart of House to ensure the highest levels of performance, management, staffing levels, customer service, back-store management, cleanliness and overall look and feel in line with daily, monthly and weekly routines.
Supervise low-performing restaurants and brands to drive quick, sustained and effective turnaround in performance.
Oversee the menu engineering of different outlets to ensure it is in line with brand positioning, market trend requirements and attracts and maintains customers.
Monitor compliance of local laws relating to hospitality/ food industry and ensure all outlets adhere & operate to the strict statutory requirement and established health, hygiene & safety policies and standards
Logistics and Purchase Coordination
Ensure optimal purchase and supply chain process for visibility on stock levels, shipments and accurate and timely distribution of goods and products to the restaurants.
Marketing
Participate in the development of marketing plans and campaigns for the Brand in line with the overall Food & Beverage Division to support business objectives , Group Marketing & Communications principles as well as the concept requirements
Ensure on floor activation of the marketing plans including but not limited to training of staff, availability of all the collaterals, social media activation in alignment with the Marketing and CRM teams to provide a seamless Customer Experience for the promotions or campaigns
Ensure successful achievement of targeted results of the marketing campaigns along with the marketing team
People Development
Coach and guide teams to perform to their optimal potential, produce highest standards of output
Engage in performance evaluation of direct team members and review the indirect span of control to ensure efficiency and consistency in assessing performance
Train the front of house staff on the GUIDE for an enhanced guest experience along with the importance of marketing and loyalty programme as well as CARES to increase revenue potential.
Provide a leadership avenue for the teams to be able to escalate their concerns to enable prompt resolution of the same
Communicate any organizational changes and mitigate risks through effective change management

Qualifications:
Minimum 10 to 15 years’ experience, with at least 5 years’ experience as a Head of an F&B;Business
Post Graduate or Degree or three years Diploma in Hotel Management or equivalent
Experience managing high-end/ five star F&B;outlets in the UAE
