As Executive Chef, you are responsible for the supervision of the entire kitchen production in
support of the Company’s business direction.
1. Specific Duties and Responsibilities:
1.1 Conceptualizes core menu of restaurant outlets.
1.2 Conceptualizes special menu offerings together with the F&B;Manager to boost the
marketing and profitability of the restaurant.
1.3 Drives all menu changes and documents them in coordination with the Food & Beverage
Manager to keep the menus exciting.
1.4 Checks the freshness of food particularly, on how it appeals to the eyes.
1.5 Ensures that all food served to the restaurant is in accordance to the standard recipe,
taste, portion and presentation.
1.6 Monitors food trends and introduces new food concept/recipe to boost outlet’s
profitability.
1.7 Ensures that wastage and spoilage is controlled to the minimum.
1.8 Supervises all kitchen productions and staff.
1.9 Attends required meetings and daily briefings with your team members ensuring efficient
communication, to run the Kitchen section smoothly.
1.10 Ensures that food cost in par with the required potential cost as well as controlled by
reviewing all store requisitions and direct purchases.
2. General Responsibilities:
2.1 Promotes teamwork among kitchen staff to achieve the highest possible performance
level.
2.2 Ensures Employee Development of the kitchen team in order for them to achieve highest
service quality standards set by the Company.
2.3 Establishes strong vendor relationships to ensure regular supply of high quality food
ingredients.
2.4 Maintains the highest possible hygiene and maintenance standards. Ensures the highest
degree of application in hygiene and food safety as per the ADFCA, HACCP guidelines to
ensure that the food served to the Guest is of highest quality standard.
2.5 Works closely and cooperate with all other key departments in the restaurant to ensure a
smooth operation.
2.6 Ensures the accurate delivery of goods in order to achieve the budgeted profitability.
2.7 Handles Guest complaints/suggestions/requests directly to achieve high Guest
satisfaction.
2.8 Demonstrates pride in the workplace and personal appearance at all times when
Represent the operations thus identifying a high level of commitment.
2.9 Adheres to Company rules and regulations at all times.
2.10 Plans effectively all FF&E;and Operating equipment for Kitchen to ensure a smooth
operation.
2.11 Conducts competition checks (as instructed) to assist the restaurant in being updated
and competitive in the local market.
2.12 Operates in a safe and environment-friendly way to protect guests’ and employees’
health and safety, as well as protect and conserve the environment.
2.13 Conducts performance review of all kitchen staff under your watch.
2.14 Complies with the restaurant environmental, health and safety policies and procedures.
2.15 Knows the facilities of Katara Cultural Village, its daily events & functions, and social
events around Doha, in order to provide correct information and address guest queries.
3. Occasional Responsibilities:
3.1 Participates in any Training/Development schemes as recommended by senior
management.
3.2 Assists Management Team in any task outlined/detailed by them.
