• Work and develop relationships with external suppliers to ensure the very best reputation within the industry and ensure that the operational Food and Beverage team can deliver the highest quality product, and the highest financial return.• Work closely with the Managers to ensure correct stock levels are available.• Hires, schedules, supervise trains and coordinate the work of Food & Beverage (F&B;) and Budget managers.• Review products delivered to ensure KPI’s are met and take up any shortcomings with suppliers• Manage F&B;budgets/ finances, payroll, purchasing and costs.• Create and apply rolls and manual standards to develop the work flow.• Required Stock, sales, items analysis report and also ensure systems are in place to safeguard inventory controls.• Responsible for maintaining, helping and enforcing the agreed brand/ quality standards for each unit by conducting and managing monthly audits.• Ensure that the industry standard with regard to safety and hygiene.• Develops initiatives to build sales, profitability and guest counts.• Train staff and develop serving and work process.• Constantly review the product range to ensure that all key quality standards are maintained.• Assist in the planning and implementation of new ideas and menu specifications each quarter.• Must provide an environment of openness and trust with constant feedback and performance coaching.• Carry out supervisory responsibility by following policies and procedures.• Adheres to all Health Department.• Oversees correct receipt, storage and handling of food and beverage products to ensure quality and freshness at all times.• Performs other duties as assigned by the line manager.
